Tired of burning your chicken? Or working hard at making a delicious dinner, only to serve it and find out it’s still raw? In my Essential Skills class, I’ll cover the basic skills you need to make a simple but delicious dinner, including:
  • Breading
  • Browning/Searing
  • Saute basics
  • Dicing an onion
  • Folding
  • Making pan sauce
  • Making a vinaigrette
Ingredients for the standard course will be provided. Materials (knives, cutting boards) can be provided or we can use your own. Classes start at $60 per person, up to four people for a 2 – 3 hour course.  Classes are offered in your home in San Francisco and San Mateo counties. Knife Skills

Want to learn to cut like a pro, or at least cut safely and evenly without cutting yourself?  Then this is the class for you! In Knife Skills, we will cover:
  • Knife safety
  • Knife handling
  • Knife and cutting board sanitation
  • Cutting techniques:  dice, julienne, mince, chop, chiffonade and concasse
  • Knife care:  sharpening and honing / steeling your knifes

Dinner Party Planning

In this class, we will cover how to prepare a dinner party for four to eight people.  You will learn to prepare the dishes ahead of time so you can enjoy your guests without being stuck in the kitchen. Along the way, students learn the fundamentals of menu planning, essential knife skills, understanding food/wine paring, and how to approach grocery shopping. Ingredients
  1. 16 oz whipped cream cheese
  2. 1/4 cup fresh lime juice
  3. (1) 4 oz can smoked chipotle peppers
Instructions
  1. Add chipotle peppers, lime juice and whipped cream cheese to blender and blend at low speed until incorporated.
  2. If mixture is too thick, slowly add cool water until you get a smooth consistency.
Notes

Ingredients
  1. 1 ea. pork shoulder (bone-in)
  2. 2 cups BBQ sauce
  3. 2 cups apple cider vinegar
  4. 1 cup blackening spice
  5. 10 cloves garlic
  6. 2 each onions, peeled & quartered
  7. 2 quarts water
Instructions
  1. Rub pork with blackening spice and BBQ sauce
  2. Place in a deep baking pan with the onions, garlic and carrots
  3. Add the water
  4. Cover with foil
  5. Roast in the oven at 300 degrees 7-8 hours until fork tender
  6. Check at approx. 3 hours
  7. Remove from oven and allow to cool while still in the water
  8. Pick and shred the meat off the bone, removing any large pieces of fat
  9. Mix in a little more BBQ sauce and some of the liquid to keep it moist and add additional flavor
